We love a good soup recipe. Make a batch for the perfect Fall dinner, then enjoy the leftovers for lunch all week! Today our friend Gaby Dalkin (of What's Gaby Cooking) is sharing her take on butternut squash soup -- it's sure to be a seasonal favorite.
You guys... it’s officially soup season! I’ve been waiting for this time of year for months. Never mind the fact that it’s still 90 degrees here in LA and I have to crank up the AC for it to really feel like fall, but the show must go on!
This Butternut Squash soup isn’t just any soup. It’s loaded with butternut squash, carrots, and bell peppers so you’re getting in TONS of vegetables all while enjoying a silky smooth and creamy soup that is perfect with a side of garlic bread! Perfection I tell you! You can’t go wrong with this. I’d even be so bold as to tell you to make a triple batch and freeze some for a rainy day when you can’t be bothered to cook.
Have at it! Recipe here.
